Ageing, settling and coupage (Blendig)

After that process, for the first time wine rests as stocks did in winter. The vinification process is over and order, balance and our best in the production of really good wines such as 2πr start. This process will take the necessary time to obtain exceptional wine varieties.

From stainless steel tubs, the wine is poured into oak-made large barrels, which is the best type of container for the wine’s natural and calm rest. The wine’s personality and nature slowly awake, its traces clearly show and one can guess intuitively different scents from different fruits and from different spices, in a rich combination of smells and flavours.

The red Grenache, cabernet sauvignon and merlot wines from the manor are just ripe, they have successfully passed all tests and have what they need to have: perfect characteristics in every ageing variety.

The wine’s craftsmanship in action determines coupage; the marriage between varieties is separately studied in order to concrete the exact proportion point in a desire for offering some craft wines which retain monastic tradition combined with nowadays bold style.
