
The exclusive rule of our wines, based on uniquely using our own grapes, has reached its agrarian climax. By means of methodical analytic tests, the optimum maturing point is determined; grapes show their balance through different parameters and, with their acidity and sugars completely counterbalanced, the grape gathering festival starts. Grapes ask for being picked up.
The same people who carried out the pruning watch their authorship work has been rewarded with loaded grape bunches and, again one by one, manually, the vine stocks provide the base for a future extraordinary wine.
The selection of the best grape bunches is carried out under strict criterions and the left overs are thrown out so as to obtain the best of every plant only. The visual observation and the different stages of the plant’s evolution process determine the agricultural engineers’ conclusions when choosing the superior and the best grapes, and then proceeding to vinification.
The final result is bound to be an authentic 13’5 degrees Priorat wine, which is celebrated, once the grape gathering is over, with the traditional feast in which everything oozes excellence.
